The division of wine territories through Geographical Indications (Appellations d'Origine Contrôlées) is based on the need to develop agricultural production towards more delicacy. Far from being fixed, bounded spaces are driven by the desire to bring to the foreground cores of quality, with virtuous dynamics. This is a model that has been developed in France since its inception in 1935 until today. A whole process of spatial construction follows. However, it is subject to internal and external developments, especially those related to consumption, as well as new constraints such as globalization. It is now threatened, while moving to new ways, such as organic wines.
